One of the things I really want to do whilst on maternity leave is try lots of new recipes – nothing fancy necessarily, just lots of really good family dinner ideas.
So tonight I tried a Sainsbury’s recipe – Chorizo & Sweetcorn fritters. I’m not very good at sticking to recipes, and often don’t have all of the ingredients, so this is my adapted version – which you can swap out ingredients from the options I’ve suggested based on what you have in the fridge and cupboards – I’m not a fan of recipes that require things like pomegranate or unusual ingredients that you can’t easily substitute for something else you have in.
I’m also a bit of a make it up as you go person when it comes to quantities such just adapt based on how many you’re cooking for!
Ingredients (choose between the options for each ingredient or combine)
Spanish Chorizo / German sausage
Potaotoes / sweet potatoes / squash (not instant mash like the recipe suggests)
Sweetcorn / peas / spinach / red peppers
Pinch of chilli powder / dried chilli seeds / fresh chopped chilli / sweet chilli
Coat in: Flour, egg and breadcrumbs
Serve with: Beetroot salad / soured cream / poached egg
Cook in: small amount of olive oil
Mash your potatoes of choice.
Fry the sausage.
Combine all ingredients in a bowl and allow to cool
Shape into patties and coat in flour, egg and breadcrumbs (omit this step for lower carb)
Cook at 180 degrees for around 25 minutes. I sprayed with 1 cal spray.
